Chicken lentil stew it's a very easy recipe with lots of nutrients and protein, This meal is suitable for winter days after a long day working, it will soothe your mood and fill your hunger. The level of satiety depends on what you can serve this dish with whether with rice or with salad or both!
Ingredients:
1.chicken breast
2.red lentil
3.onion
4.rice (optional)
5.oil
6.chicken broth
7.spices (salt, pepper, paprika, turmeric)
Preparations:
Boil the chicken breast for 30 min and once it's done rinse and drain it, then shred it either by fork or by hand whichever you prefer. Bring a pot with some oil on high heat then add the lentil, stir it for a few min then add enough water to cover the lentil and leave it to boil for an extra few min as well. Once the lentil's water is about to dry add more water depending on the number of servings you need, then add the shredded chicken and all the spices except the salt. When it starts to boil you can lower the heat add the salt and it will be ready within a couple of mins. If you decide to serve it with rice use the chicken broth to cook the rice if not use the broth instead of the water within the stew.
