Stuffed Zucchini

Zucchini is an unusual vegetable that has no sold taste neither calories, yet its healthy with lots of benefits. Its family members include zucchini, squash, yellow squash... etc. all of which share same features generally speaking. Because of its low-calorie content, its been a staple in all the diet plans and cooked in many ways. One of my personal favorite is the stuffed baked one which we are going to prepare today.

Ingredients:

1. zucchini
2. lean ground beef
3. rice
4. thick hot salsa
5. seasoning
6. chopped onion

Preparation:

Cut one end of the zucchini and use a veggie corer ( if you don't have it use spoon works just fine) to empty its content leaving it as a hollow shell, keep the end as a lid for later. cook the beef on high heat with some onion, salt, and pepper. once the water dry and the beef is cooked thoroughly add the salsa and mix it well. turn the oven broil on as we start stuffing the zucchini with the beef salsa mix. lay them in a baking pan, then add some olive oil and seasoning on the top. Broil it to crisp the surface for 30 min which is enough to prepare the rice. This dish is served hot.
